One of the best things about this dish is how incredibly moist the chicken meat is and part of the reason for that is because chicken thighs are a fattier/tastier cut of meat. The bones also impart some flavor to the whole dish - kind of like when you make chicken stock with the carcass of a turkey/chicken. You could always give it a try though and let me know! I have skinned the chicken thighs in the past with successful results. I know what you mean about chicken skin and bones - I always end up with a nice little pile of carnage after making this recipe and it is kind of gross.
