Biscuits and gravy is usually a favorite treat the morning after Thanksgiving with leftover (vegetarian) gravy. I don't make it too often, but I always make too much when I do. This sounds like an easy way to use it up. While eating it by the spoonful is delicious, it might not be as well balanced as an egg bake.
