Olive oil...Jessica, melted butter would work great! Olive oil too...just some mixture to get those crumbs to adhere a bit better. Egg will add a little more "body" to the breading, but honestly I think butter would taste fantastic. And you can always just dredge in a seasoned flour mixture and lightly fry in oil.
